Dark Chocolate Mint Truffles

Chocolate and mint, mint and chocolate. Oh my, I do love that combination. I’m the kind of person that whenever available chooses mint and chocolate regardless if it’s ice cream, chocolate bars, cake, brownies, or etcetera. I actually got a request from you guys to make something with chocolate and mint, and as mint chocolate lover I am, I simply had to follow your request. So here we are! These cuties are a minty version of my fabulous Melt in Your Mouth Chocolate TrufflesIf you’ve tried that recipe, you’ll know how freakishly easy they’re to make yet utterly scrumptious. Their texture is smooth and creamy yet not messy to eat and melt in your mouth in the most MIND BLOWING of ways. I’m not even exaggerating!

To play with textures and contrast in textures I rolled my truffles in some finely grinded cacao nibs which I made using a mortar and pestle. Of course though, you can just roll them in cocoa powder or whatever your heart desires instead. On another note, these truffles would make a lovely gift. They take minimal amount of time to make and are still hella fancy and impressive as a gift. Plus, even though these cuties are decadent and luscious, they’re not wholesome in the way that they’re basically just dark chocolate mixed with a splash of milk and nut butter unlike store bought ones.

Dark Chocolate Mint Truffles

The perfect vegan, wholesome dark chocolate truffles with a fresh minty twist that take no time at all to make and doesn’t require any cream or butter.

Ingredients

Scale
  • 60g / 2,1 oz dark chocolate, broken up
  • 1,5 tbsp milk of choice
  • 1 tbsp nut butter of choice
  • A pinch of salt
  • A few drops peppermint extract/ flavouring (be careful with this)
  • Around 1/2 tbsp cocoa powder or ground cacao nibs coating the truffles

Instructions

  1. Place the broken up chocolate, milk, nut butter, peppermint extract, and salt in a microwave-safe bowl. Microwave on low effect until the chocolate has softened and melted halfway. Let it sit for a few minutes and then take a spoon and mix until you get a nice, thick, smooth chocolate mixture. If your chocolate hasn’t melted quite enough, pop it back in the microwave for a few more second.
  2. Let firm up in 20-30 minutes in the fridge. You should be able to easily shape a ball of the truffle mixture with your hands without it sticking to them too much.
  3. In a small bowl put the cocoa powder or ground cacao nibs. Take a heaping teaspoon’s worth of the truffle mixture and roll into a nice ball. Roll and cover in cocoa. Repeat with the rest of the truffle mixture. Store them in the fridge. Enjoy!
