Nuttyholic’s Chewy Salted Caramel Brownies

On a similar note to my Nuttyholic’s Chocolate Cookies, here we have a Nuttyholic’s Chewy Caramel Brownies. These brownies consist of three components:

  • Chewy and amazing brownies,
  • A mouth-watering salted caramel sauce,
  • And aaaaaaall the nuts

Let’s start with the brownies. These brownies are my absolute favourite recipe through all time. They’re super easy, chewy, chocolatey, and absolutely delicious while being made with few and super simple ingredients which makes them gluten-free, vegan, refined sugar-free, and oil-free. So regardless of dietary preference, the brownies are perfect for you. By now you probably recognise my favourite salted caramel recipe. It consist of four ingredients, liquid sweetener (I always use maple syrup, which tastes like a dream come true), nut butter, lots of salt, and vanilla. The main reason why I use this salted caramel in basically anything is because it simply is so darn good and easy. Lastly, we have all the nuts you can ever imagine. Of course, you use what ever nuts you like. If you want to you could only use walnuts or only almonds etcetera, but the combination of aaaaall the nuts is quite unbeatable. The nuts give these brownies a beautiful contrast in texture and a boost of extra nuttiness. YuuuuUUUuum! Plus, you can get some sexy halved nut action when you cut into the brownie, as you can see in the pictures below.

Nuttyholic’s Chewy Salted Caramel Brownies

Luscious chewy brownies topped with lots and lots of delicious nuts and salted caramel sauce. These are simply a nuttyholic’s dreams come true!

Ingredients

Brownies

  • 200g / 7 oz pitted dates
  • 2 tbsp nut butter
  • 1/2 tsp vanilla extract
  • 30g / 1,1 oz cocoa powder
  • 20g / 0,7 oz oat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • A hearty pinch of salt

Caramel sauce +  topping

  • 2 tbsp nut butter
  • 2 tbsp liquid sweetener of choice
  • A hearty pinch of salt
  • 1/2 tsp vanilla extract
  • Two large handfuls assorted nuts of choice, very roughly chopped and preferably roasted

Instructions

  1. Preheat the oven to 150ºC / 300ºF and prepare a brownie pan by greasing and lining it with parchment paper. My brownie pan was 13×13 cm / 5×5 inches.
  2. In a food processor, start to process the dates, nut butter, and vanilla until smooth. If too dry, add a splash of water. Add the rest of the brownie ingredients and process until combined. Transfer to the prepared pan and flatten out using a wet spatula or your hands.
  3. In a small bowl, combine all the ingredients for the caramel sauce except for the nuts. Dollop and drizzle the caramel sauce onto the brownie. Create a swirly pattern by running a knife through the caramel and upper layer of the brownie. Top with the nuts and press slightly into the brownie. Bake for 35 to 40 minutes until firm and chewy. Let cool, cut up, and enjoy!
