No Bake Chocolate Balls A.K.A Chokladbollar

A Swedish classic which combines all the elements you’d ever need. They’re creamy, chocolatey, rich, and is so easy to whip together they’re one of the first things children learn to bake in Sweden. I’ve included two versions, one made more raw ball style and one proper classic with sugar and butter, both equally delicious!

Raw ball style

  • 150g / 5,3 oz pitted dates
  • 2 tbsp of nut butter of choice
  • 30g dark chocolate, melted
  • 34 tbsp strong coffee
  • 100g / 3,5 oz rolled oats
  • 2 tbsp cocoa powder
  • A small pinch of salt
  • 1/2 tbsp vanilla sugar or a splash of vanilla extract
  • Shredded coconut or pearl sugar for rolling

Classic

  • 100g / 3,5 oz butter or margarine, room temp.
  • 7590g regular sugar, depending on how sweet you want them
  • 5 tbsp cocoa powder
  • 1/2 tbsp vanilla sugar or a splash of vanilla extract
  • Around 150g rolled oats
  • A hearty pinch of salt
  • 34 tbsp STRONG brewed coffee, cold
  • Shredded coconut or pearl sugar for rolling

Instructions

Raw ball style

  1. Put all the ingredients in a food processor and process until combined and the dough holds it shape when pressed.
  2. If not too loose, roll the dough into 10-15 balls and roll in shredded coconut or pearl sugar. Otherwise, let rest for half an hour in the fridge before rolling. Preferably let the balls rest in the fridge for an hour to firm up, serve, and enjoy!

For the classic

  1. If possible, use a food processor and put all ingredients, except for the coconut/pearl sugar. Mix until combined and the dough holds it shape when pressed. If you don’t have a food processor, cube the butter into a large bowl. Add the rest of the ingredients and with clean hands, “knead”/crumble together.
  2. If not too loose, roll the dough into 10-15 balls and roll in shredded coconut or pearl sugar. Otherwise, let rest for half an hour in the fridge before rolling. Preferably let the balls rest in the fridge for an hour to firm up, serve, and enjoy!
