No bake Cardamom Caramel Pear Walnut Thumbprint Cookies

No bake pear cookies filled with delicious salted caramel

Cookies

  • 4 tbsp rolled oats, oat or almond flour
  • 100g / 3,5 oz dried pear, cut in pieces*
  • 30g / 1 oz pitted dates
  • 30g / 1 oz walnuts
  • 1/2 tsp vanilla extract or essence
  • A pinch of salt

Caramel filling

  • 30g / 1 oz pitted dates
  • 23 tbsp water
  • 1/2 tbsp nut butter
  • 1/21 tsp cardamom
  • 1/2 tsp vanilla extract or essence
  • A pinch of salt

Instructions

  1. In a food processor or powerful mixer, start processing all the ingredients for the cookies until you get a kind of chunky “dough”.
  2. Line a baking tray, plate or such with plastic foil or parchment paper. Divide the dough into ten ball and place them on the prepared pan. Press a thumbprint into center of each ball.
  3. Mix all the ingredients for the filling completely smooth. Using a small spoon fill the holes in the cookies with the caramel filling. You can serve immediately or let them rest in the fridge until serving. (I find that the cookies are even better the day after as they’ve set slightly)

Notes

*I made my own dried pear by thinly slicing lots of pears and then drying them in the oven, which is set on 60ºC, over night. HOWEVER, you could substitute it for some dried apple (which probably can easily be found in your local supermarket) or other fried fruit of choice.
