Chocolate Covered Chewy Toffee Bites A.K.A. Dumle

The classic Finish/Swedish chocolate covered toffee treat, Dumle, in a new and improved version based on wholesome ingredients, dates and nut butter.

Ingredients

Scale
  • 150g / 5,3 oz pitted dates
  • 2 tbsp nut butter of choice
  • Two hearty pinches of salt
  • 1/2 tsp vanilla extract
  • Optionally a splash of toffee flavouring*
  • Melted chocolate for dipping and coating

Instructions

  1. In a food processor, mix the dates, nut butter, salt, vanilla, and toffee flavouring into a smooth slightly sticky dough. Transfer to a bowl and let firm up in the freezer for at least an hour.
  2. Shape the dough into small little toffees and place on a plate lined with plastic wrap or parchment paper. Alternatively, you can press down the dough into a a square dish lined with parchment paper or plastic wrap, freeze it and then cut it into small squares with a sharp knife. Dip the toffees in the melted chocolate. Place them on the prepped plate and let the chocolate set in the fridge or freezer. Devour!

Notes

*It is NOT essential to the recipe, but it gives the salted caramel layer that extra oumph of caramel and toffee. I found a bottle of it at a local spice store.
