Dream Cookies AKA Drömmar With Salted Caramel Chocolate & Almonds

Like a dream they melt in your mouth, hence the name “drömmar” which means dreams in Swedish. Here, I’ve added some amazing salted caramel chocolate and toasted almonds to the already amazing cookie. Super easy to make vegan as well so you can enjoy them with your plantiful friends!

Ingredients

  • 50g margarine or butter
  • 90g sugar
  • 2 tbsp neutral oil, I used rapeseed/canola
  • 120g flour
  • 1/3 tsp ammonium carbonate AKA “hjorthornsalt”*
  • 1 tsp vanilla sugar or a splash of vanilla extract
  • 12 hearty handfuls of chopped toasted almonds
  • 40g chocolate of choice, I used this with salted caramel bits

Instructions

  1. Preheat the oven to 150C/300F and line one or two baking tray(s) with parchment paper
  2. Stir/whip together the butter and sugar until pale and fluffy.
  3. Stir in the oil, and then the rest of the ingredients.
  4. Divide into 10 equal balls and place on the prepared baking trays. Bake for 10-12 minutes or until just starting to catch some colour. Let cool and enjoy!

Notes

*You can use double the amount of baking powder instead, but it is not quite the same and it may slightly alter the flavour and texture.
