First, I was planning on just sharing this little recipe jut on my Instagram, @the_veggienator. Then, after spending a solid amount of time topping and photographing this impulsively made Saturday night dessert, I thought it turned out too good not to share on here too. Also, I’ve been thinking of perhaps starting to share easier recipes, like of my favourite snack ideas and treats. Basically, I want to start sharing all the recipes I make on at least a weekly basis if not daily that take minutes to make. Just to spread some more widely available and more “daily life realistic” inspiration.

This dessert is not only easy to make, healthy, but also delicious. Mind blown? I hope not! I topped this little improvised, impulsively made Saturday night dessert with some of this Choc Shot with Coconut flavouring. I bought it when I was in Edinburgh over New Year’s and it’s so darn delicious. Like who can not like liquid chocolate?! I’m just so sad I can’t get it in Sweden…
Easy Peasy Choc’ Mango Ice Cream
Serving 1 person
- 150g / 5 oz frozen mango
- 125ml / 1/2 cup milk of choice
- 1-2 tbsp cocoa powder
- Optionally a pinch of salt
- Toppings like nut butter, cereal, cacao nibs, chocolate sauce, etc.
- Simply blend all the ingredients, except for the toppings, smooth. Transfer the ice cream, topp it with what ever your heart desires, and serve.
